Superfood Ginger-Soy Salmon with Spicy Maple Sauce

Ingredients
Superfood Spicy Maple Sauce
- 1/2 cup maple syrup
- ½ teaspoon soy sauce
- 1/2 teaspoon red chili flakes
- 1/2 teaspoon toasted sesame oil
- 1 stick pack Superfood of the Sea
Salmon
- 1 1/2 pounds fresh salmon skin on
- Salt and Pepper to taste
Veggie Mixture
- 1 large head bok choy roughly chopped
- 1 red pepper sliced
- 2 tablespoons any neutral-flavored oil
- 1 inch fresh ginger sliced
- 1 lemon sliced
- ½ teaspoon soy sauce
Instructions
- Preheat oven to 400 degrees
- Prep the salmon. If you have large side of salmon, cut into 4-6 ounce portions and remove and pin bones with tweezers. Salt and pepper to taste.
- Prep veggie mixture. Toss the bok choy and red pepper with oil and soy sauce, roast for 5 minutes. Then add the salmon to the sheet pan skin side down with the sliced ginger and lemon on top. Continue to roast until just cooked through, 10-12 min, depending on thickness of the salmon.
- While cooking the salmon and veggies, make the spicy maple sauce. In a small saucepan combine all ingredients, heat and simmer for 4 to 5 minutes, stirring occasionally until the sauce coats the back of a spoon.
- Top salmon with superfood spicy maple sauce and serve over rice. Enjoy!
